Wh.Chocolate-Raspberry Mini-Cheesecakes by SPIKE

What says Valentine's Day more than chocolate? 

 

12  Nilla wafer cookies

 

6 0z. brick cream cheese, softened

5 tablespoons + 1 teaspoon white sugar

1 large egg

1/2 teaspoon pure vanilla

1 oz. good quality white chocolate, chopped

24 fresh raspberries

 

Preheat oven to 375 degrees.  Place a Nilla wafer in each of the cups of a silicone mini muffin tray (you could also use a well-greased metal tray).

 

Beat cream cheese in electric mixer with paddle attachment until smooth.  Gradually beat in sugar.  Add egg, and beat well, blend in vanilla.  Melt chocolate in heatproof bowl over simmering water.  Slowly stir into cream cheese mixture.  Spoon about 1 tablespoon into each muffin cup, top with 1 raspberry, then top with cream cheese mixture (muffin cups should be full).  Bake for 15-18 minutes, until puffed and set.  Cool on rack for 20 minutes, remove from cups by running dull knife around edges, and pushing cheesecakes up from the bottom.  Let cool completely, then refrigerate.  Top with an additional fresh raspberry. 

 

Yield: 12 mini cheesecakes, perfect for a decadent end to a romantic dinner.
