I was a fly fishing guide in Argentina for 3 months last year . One of my many duties were to kill, clean, and cook sheep for the clients dinner. It was quite unpleasant but the end result was unbelievable(for the clients that is). We guides wood carve the sheep and the best cuts were brought into the lodge. Afterward we would sit around like damn cave men with knives and eat the scraps!! It takes about two hours of attentive turning and adjusting to get it right. All the while you toss salt on the poor thing and wait until nobody is looking to cut a hunk off for yourself. This is called Asado and is very common in this part of the world. I will never looked at lamb chops the same way again.
