Goat Cheese Mashed Potatoes by

I love making this for Thanksgiving Dinner. Still a classic, but updated a bit with some sophiscation and flavor!
2 pounds white russet potatoes, peeled and quartered
4 ounces goat cheese
2 tablespoonse butter
1/2 cup milk
salt and white pepper to taste
Boil large pot water over high heat. Add potatoes and simmer until tender (about 10-15 mintues). Drain potatoes and put in mixing bowl. With handheld mixer, beat potatoes on low speed. Add in goat cheese, butter, 1/2 cup milk. Whip potatoes on medium speed. Salt and pepper to taste.
