This is a Thanksgiving tradition in my family. Those of you not from the South, if you haven't had pimento cheese, you've GOT to try it and Granny's version is the best! Great for some pre-bird pecking...
1.5 Lbs Extra Sharp Cheese
1 Pint REAL Mayonnaise (do not even THINK of using low fat or fat free!)
7 ounces Pimentos
Blend all in a food processor and chill 15 minutes in fridge.
Spread the pimento cheese in celery stalks and serve at room temperature.
