Butterscotch Thins by AsTheNight

The smoothness of butterscotch contrasts with the crunch of chopped nuts to make a thin cookie that'll please children and adults.

 

6 oz. Nestle's Butterscotch morsels

1/2 cup butter

2/3 cup light brown sugar, packed

1 egg

1+1/3 cup flour

3/4 tsp. baking soda

1/3 cup chopped nuts (walnuts or peanuts work best)

3/4 tsp. vanilla

 

Preheat oven to 375 degrees.

 

In a double boiler with hot, but not boiling, water, melt the butterscotch morsels and butter. Remove from heat.

 

Beat in the light brown sugar and the egg, until smooth.

 

Add flour, baking soda, nuts and vanilla. Stir until well combined. Chill for 10 minutes.

 

Shape into a roll and chill for 30 minutes. Slice very thin and bake on an ungreased cookie sheet for 5 to 6 minutes.

 

Cool on baking sheet for one minute and remove to cooling rack. When thoroughly cool, store in an airtight container.

Very nice. I'm not a chocolate person, so butterscotch sounds great.
