Yummmy Crispy Chicken Fingers without the Guilt! Fast Food at home that HEALTHY!
1-2 pounds of Boneless Skinless Chicken Breasts
3 cups crushed corn flakes
Black Pepper, Cayenne, Salt, and spices to taste
4 egg whites, beaten
Combine the corn flakes and spices to taste. To "kick it up a notch" add a little extra cayenne pepper to the flakes.
Pound the chicken breasts until the chicken is even in thickness and in a effort to relieve your frustration over meeting your New Years resolution to eat healthier . Cut the chicken breasts into strips about 1 inch wide.
Dredge the strips through the eggwhite and then through the cornflake coating. Make sure that you cover the strips completely for maximium crunch.
Place the strips on a baking sheet that has been sprayed with fat free cooking spray and bake in the oven at 350 degrees till golden brown, about 25 minutes.
Serve with low sugar ketchup or any fat free salad dressing and pretend you are at your favorite hamburger joint!
